About the wine

To get a feel for the hilly landscape aesthetics, there is no way around this sparkling wine, which the Swiss winery Charles Rolaz / Hammel SA masters with a keen sense of texture. There is something left over from Christmas dinner every year. Do you know that? Why not invite your friends to a glass of wine in the afternoon to enjoy the festive meal once again and we recommend this dominant sparkling wine to go with it. Flaschenpost team tip: Combine this sparkling wine with fish dishes or aperitifs.

Charles Rolaz / Hammel SAChampagne & Sparkling wine | 75cl12.58°-10°CPinot Noir, Chasselas, Chardonnay, Pinot Blanc, Pinot Gris
Tasting note
Medium-bodied and dominant acidity result in the sparkling wine, which shows a lot of character and class in the mouth, delicately sparkling.
Culinary recommendation
Goes well with pasta with meat sauce, spicy vegetable gratin, dried meat, spicy hard cheeses.
Vinification
For many years, the entire winery has been managed according to environmentally friendly principles. Ripeness monitoring to determine harvest time, yield limit, harvest and hand-pick to keep berries intact. Additional sorting out of the best berries upon arrival in the cellar. Gentle pressing. Must removal of some grapes after a short maceration. After natural pre-clarification, a slow alcoholic fermentation follows before the wine is aged on the fine yeast. This is followed by foam formation in autoclaves.
