Tasting note
This wine shows an abundance of fresh melon and perfume followed by aromatic bitter substances and bay leaves on the palate. It has a fresh acidity yet a rich elegance and body.
Culinary recommendation
Excellent with most seafood, shellfish and sushi.
Vinification
Rooted in the oldest wine-growing soil in the world, which consists of decomposed granite on the higher slopes of the Helderberg, a location that has proven its worth as a Grand Cru site. This vineyard enjoys the refreshingly cool False Bay (Atlantic Ocean) breezes during the day and cool night air flowing down the mountain, resulting in uniform maturation and good natural acidity. The macroclimate is maritime with cold winters and sunny, warm summers. The vineyards take an organic approach with minimal intervention to obtain a true reflection of the unique terroir. No fungicides, pesticides, or herbicides are used, and biodynamic practices are used. This wine was fermented naturally and without enzymes, preservatives or stabilizers. The Olindo has not been filtered and may contain harmless deposits.
