About the wine

Tasting note
Dark plum with a ripe nose of blackcurrant, blackberry, cedarwood, coffee and spices. The tannins are soft and ripe and the aftertaste is full and long.
Culinary recommendation
A great companion for most foods, including pizzas, pasta, and meat or chicken dishes, or simply enjoy.
Vinification
At Vergelegen, all grapes are harvested by hand and then stored in a refrigerated container at -10°C for 48 hours. The cool grapes (8-10°C) are then carefully sorted on a combination of vibrating tables and slow-running conveyors, sorting between 1.5-3 tons per hour. The grapes are destemmed but not crushed and the must is macerated cold for 7 days, followed by spontaneous fermentation of 4 days, after which cultivated yeast is added and fermentation is completed. The young red wine was then left on the skins for a further 6-7 weeks before being filled into 20% new barrels for 16 months.
