About the wine

Tasting note
Dusty on the nose, with aromas of dark fruit, blueberry cake, leather, chocolate and moist soil. Medium to full-bodied with sandy tannins and ripe, almost bruised fruit. A little firm and rather short on the finish. sustainable.
Culinary recommendation
Goes very well with strong meats such as beef or lamb.
Vinification
The grapes always come from Rondekop vineyards, which are 200 to 220 meters above sea level. These vineyards are extremely exposed to wind, resulting in thick-skinned berries that provide very concentrated juice. The grapes were picked and destemmed by hand, but not crushed. The destemmed grapes were cooled to 8°C and “cold soaked” for 168 hours. Fermentation took place at 25°C, followed by maceration on the skins for 30 days. After malolactic fermentation in stainless steel tanks, the wine was filled into 50% new French oak barrels for 18 months.
