About the wine
Tenute Olianas is located in the heart of Sardinia. More specifically, in Sarcidano, a plateau in the center of Sardinia. 60 km north of Cagliari, 65 km east of Oristano, on the southern border of the province of Nuoro. The property covers over 20 ha, of which 16 ha are planted with vineyards. Tenute Olianas works organically and thus dispenses with the use of artificial fertilizers and synthetic products.

Tasting note
Light yellow-green. Spicy floral nose with notes of exotic fruits and ripe citrus. Fresh, juicy and lively on the palate with very well-integrated acidity and a long finish.
Culinary recommendation
Goes perfectly with an aperitif. Or with bottarga, a kind of tuna caviar together with fine slices on white bread with butter. On to spaghetti al cartoccio. (seafood spaghetti)
Vinification
About 20% of the grapes are grown a little earlier read. The mash fermentation takes place partly in steel tanks partly in amphorae, without the addition of pure bred yeasts and according to the BioIntegral method. This small amount is produced as natural yeast (the so-called “pied de cuve”) used in spontaneous fermentation. Following the destemming and light pressing ferments the remaining amount on grapes in stainless steel tanks at 14-16 °C.
