The winemaker from the Italian winery Schola Sarmenti has absolutely mastered his craft. Elegance and refinement are the characteristics of this red wine, which originates in the fertile and flourishing countryside of Puglia. The Flaschenpöstler guarantee a culinary experience when you serve this Negroamaro with salsiccia or venison goulash.

Tasting note
This exquisite novelty from Schola Sarmenti is deep ruby red with purple reflections. On the nose, an aromatic potpourri of blackcurrants, sweet cherries, dried plums and raisins paired with spicy accents of pipe tobacco, thyme and dark chocolate inspires. On the palate, the wine is full-bodied and dense with lots of spicy fruit and texture, velvety tannins and a pleasant and present acidity. A full-bodied yet wonderfully lively southern Italian with a long finish.
Culinary recommendation
Goes well with hearty and spicy dishes, grilled meats, game, beef, lamb, stews and fresh hard cheese.
Vinification
The grapes for Viginti come from an average of 60-year-old vines, all of which are grown in the Alberello system and are rooted on gravelly clay limestone soils 30 meters above sea level. The grapes are picked by hand and sorted again at the winery. The grapes are then gently dried for 48 days. In the process, they lose around 35% of their weight. It is then fermented and aged for 30 months in French barriques before the wine is further aged in the bottle. “Viginti” stands for 20 in Latin. The first vintage of 2017 was therefore also bottled on the occasion of the 20th anniversary of Schola Sarmenti on September 20, 2020. Only 7000 bottles were produced. The finished wine has an alcohol content of 16.8% by volume, 6.65 g residual sugar and 7.4 g acid per liter.
