Tasting note
Intense cherry red with isolated purple reflections. A very intense and fresh bouquet with notes of ripe fruit, citrus and a slight spicy scent. Round and complex with ripe tannins. On the finish, Volpolo is spicy and mineral with notes of licorice and a pleasant fruity aftertaste.
Culinary recommendation
Goes well with beef, roasts, game and aged cheeses.
Vinification
Volpolo is the elegant second wine from the up-and-coming Bolgheri winery Podere Sapaio. Ageing for 14 months in barrique barrels and 6 months in bottle.
