Tasting note
On the nose, aromas of raspberries, stone fruits with a subtle hint of melon. Soft and fruity on the palate, supported by an elegant acid structure, good fullness, balanced with a delicate melting finish.
Culinary recommendation
Goes well with aperitif with or without appetizers, fresh antipasti, Asian dishes with white meat, tofu, vegetables or fish and seafood.
Vinification
Maceration on the skins for 2 hours to extract the color and aroma of Pinot Noir grapes. Gentle pressing, must clarification through sedimentation (under the influence of gravity) and extended cold standing time in the must state. Temperature-controlled fermentation at 18°C. Ageing on fine yeasts for 6 months without biodegradation (BSA). No fining agents of animal origin were used for ageing, which is why the Salis Bio-Logical line is also 100% vegan.
