About the wine

Motivated by his enthusiasm for good wines, Andrea Davaz founded von Salis AG in 1994 with two friends. They themselves cultivate around two hectares of their own vines in the Bündner Herrschaft and purchase from over 60 winegrowers in Fläsch, Maienfeld, Jenins, Malans, Zizers and Trimmis. The Bündner grapes grow there on more than 50 hectares, making the wines something special.

Tasting note
The bouquet has beautiful mineral notes with a fruity aroma of green apples and a touch of exotic things such as kiwi. Soft, fruity start on the palate, well-structured acidity with a slight tartness and persistent saltiness on the finish.
Culinary recommendation
Goes well with aperitifs and light appetizers.
Vinification
The wine simply fine WHITE is a blend of three different grape varieties: Blanc de Noir, Chardonnay and Sauvignon Blanc. Each grape variety is first vinified and aged individually. The grapes are carefully and extremely selectively harvested by hand in crates. In the cellar, the grapes are gently stripped and put on the press. There they are carefully pressed. The resulting must is clarified naturally and then fermented in stainless steel tanks at around 18°C. The young wines then spend some time on the fine lees. At the beginning of the new year, you taste the individual batches and create the cuvee accordingly. After making the wine, we leave it on the fine yeast for some time. It is then carefully filtered and bottled in spring.
