Tasting note
Eye: dark ruby garnet, violet reflections, delicate brightening of the edges. Eye: heart cherry fruit underlaid with fine roasted aromas, mocha, underlaid with sweet black berries, a hint of caramel, multi-faceted bouquet. Palate: Subtly spicy juicy plum fruit, pleasant extract sweetness, fine tannins, finesse structure, sticks well, mineral touch on the finish.
Culinary recommendation
Goes well with grilled meats and wild wings, mildly seasoned meat, risotto and pasta dishes, mild hard and soft cheeses.
Vinification
Aging in small oak barrels for 15 months, homogenization in the tank for 2 months before filling, 18 months storage in the cellar after bottling
