Café de Paris is in some respects an expression of French winemaking art. It is an aromatic sparkling wine produced in the Bordeaux region. Café de Paris is the result of a double fermentation process: In the first fermentation, white wine is produced by converting the sugar contained in the grape juice into alcohol. This is the classic white winemaking process. These base wines come from different grape varieties and are combined into a homogeneous blend by our cellar master, the Maître de Chais, to ensure the consistent quality of our sparkling wines. These wines are the basis for the Café de Paris “Blancs de Fruits”. The second fermentation is used to foam, which results from the addition of sugar and yeast, after which the wine is left to mature for 4 to 6 weeks in closed containers. At the end of this second fermentation period, the wine is cooled and then filtered, after which natural extracts and aromas are added.
