About the wine

At just under 12 hectares, San Martino della Battaglia doc is one of the smallest appellations of origin in Italy. Campo del Soglio was first pressed in 1988. This was done with the intention of saving the little doc from being forgotten. With this wine, Luca Formentini tries to produce a white wine of the highest possible quality, thus expressing the potential of this small doc. In 2008, the European Community banned the use of the name Tocai for wines not from Hungary (Tokaji). This is despite the fact that the grape variety also has a long history here in Lombardy. For this reason, the question mark on the back label. A wine without a name. The white grape variety Tuchì, (synonym for Tocai or Sauvignonasse), is characterized by a considerable need for attention: thin skin, low acidity and a short maturation curve make it a demanding sparring partner in the vineyard. These aspects are also reflected in winemaking and are probably one of the reasons why most winemakers have almost completely abandoned this grape variety. Luca Formentini proves the opposite. His recipe: An uncompromisingly low yield. The grapes are harvested by hand and brought into the cellar in small boxes, where they are gently pressed. The must is immediately cooled down, passed into steel tanks and aged there. The finished wine is bottled between spring and summer.

Tasting note
On the nose, a wide range of scents. Flattering, yet clear and straightforward. Thyme, chamomile, alternately in the game. This is accompanied by notes of pome fruit and citrus. It has a clear development in the glass, benefits from the oxygen supply almost like a red wine and is therefore not afraid of rising temperatures, which allows it to reveal its full complexity. The finesse of the nose is reflected in elegance on the palate. Cleanliness and straightness.
Culinary recommendation
Goes well with fried hake with a crunchy salad.
