Culinary recommendation
Goes well with: ham, terrines, poultry liver, grilled meats, mushroom dishes, risotto with truffle, tuna with herbs, T-bone steak, chicken breast with lentils, lamb curry, veal kidneys, ravioli with meat filling, venison, fried chicken with mushrooms and mildly spicy cheeses such as Comté, Emmental, Grudge Yere, Tilsit, Tomme de Savoy and Gouda.
Vinification
For the SÉLÉNÉ cuvée, the Divico grapes are selected from the best individual vineyards of the estate. The amount harvested is very limited. The unique quality of the grape estate results from the consistently implemented, sustainable management. For each plot, the grapes are picked by hand to the exact date, according to the optimal degree of ripeness, sorted out and brought to the cellar in small containers. A second sorting is carried out there. After fermentation for about three weeks, the wine is aged on the fine yeast in barriques for 12 months.
