The working methods on his Podere Castellare have been meeting the criteria of organic farming for years. Panerai is one of the few who still maintains the use of Cannaiolo in small quantities, out of respect for tradition and the conviction that it is these small details that underline the uniqueness of a wine. Hardly any Chianti Classico radiates as much Tuscan warmth and spice as Castellare wines.
