About the wine
The absolute specialty on the Weingut Bietighöfer are the wines from the “Grande Reserve” line, which are spontaneously fermented on their own yeast in new 500 liter wooden barrels and impress with their authenticity. Young winemaker Stefan Bietighöfer boldly implements new ideas — this is well received and promises a bright future. As early as the 17th century, the Weingut Bietighöfer was used to grow wine and Stefan Bietighöfer knows the importance of high quality. With passion and diligence, he continues what generations have built up before him, showing his keen sense for the best locations and the right measures at the right time. As a member of the “Generation Riesling” association, the direction of the young winemaker is clear: He is committed to (quality) Riesling, looks beyond national borders and impresses with authentic wine. Stefan focuses all work steps on environmentally friendly management. Weingut Bietighöfer cultivates around 19 hectares of vineyards. The wines acquire their typical character in combination with the mild climate and the clay, sand and limestone soils. His wines are not subject to temperature control during fermentation, no corrective intervention is carried out in the cellar, they are not pre-clarified, but fermented spontaneously in 500l tonneaux from the Pomerol tonnellerie Sylvain, neither refined nor filtered, and they are allowed to mature in the barrel on full yeast until they are fermented through.
