Tasting note
This wine shows a deep plum color. The nose is inviting with red currants and black cherry, combined with fine spice and vanilla. The palate is multi-layered with black berry fruits, enveloped in soft, rich tannins. Notes of rosemary and olive tapenade give a pleasant vegetal freshness. As with all red Eagles' Nest wines, there is also a subtle pepper spice that makes this wine unmistakable and proves its origin on a cool ground.
Culinary recommendation
Goes well with strong meats such as beef, lamb or game.
Vinification
The vineyards range from northeast to northwest, on rugged mountain slopes. All grapes were harvested by hand, sorted by hand, crushed and placed in medium-sized, open top fermenters. Punch-downs and pump-overs were performed three to four times a day, these practices being determined by twice-daily tastings of the tanks. The fermentation lasted 9 days, after which the free-running wine was drawn off and bottled into barrels with first, second and third occupancy, where the malolactic fermentation took place. Six different cooperages were used, each specially selected to complement the different nuances of this very complex wine. After 18 months in the barrel, the best barrels were assembled and bottled.
