Giulio Santarelli's Castel de Paolis is located between Rome and Frascati in the Castelli Romani. From the realization that the bad reputation of Frascati is not due to God, but man's fault, he subjected his Castello to a radical cure, replanted old grape varieties (Cesanesa d'Affile and Montepulciano) and supplemented the stock with varieties from other regions (Syrah, Sangiovese). The famous Tuscan oenologist Franco Bernabei has recently been assisting him. Campo Vecchio bears his signature: a wine of great depth, polished expression and good structure, full of elegance and race.
