<p>The pressing and production of the Primitivo DOPPIO PASSO follows a complex process that is necessary to produce such a fine wine in a class of its own. Some of the vines must be harvested in the second or third third of August for the Primitivo DOPPIO PASSO. A traditionally proven process is used to process the fruity grapes into a wine. Fermentation lasts at least two weeks, during which a temperature of at least 28° Celsius must prevail. </p> <p>The second part of the vines, on the other hand, must continue to mature on the plant for three or four weeks. Only after they are very ripe are they also fermented. Last but not least, the two parts are carefully mixed and fermented again together. This process not only gives the Primitivo DOPPIO PASSO a slightly increased alcohol content, but also becomes wonderfully rich in aroma and full-bodied. The color of the wine is also warm and is emphasized by shimmering accents. Overall, the wine is pleasantly round and has an excellently fine fruit sweetness. Its taste is rounded off by light, spicy aromas. It is recommended to drink it at a temperature of around 18° Celsius, as it then develops its full range of aromas.
