Tasting note
This 100% single vineyard Chardonnay shows a seductive light gold color. It gives tempting and distinctive fruit notes of citrus, green apple and peach. Butterscotch and lime notes on the mid-palate, followed by a long citrus jam finish with a delicate almond aroma. The balanced and crisp mouthfeel gives this wine a combination with light and delicate cuisine.
Culinary recommendation
Goes well with langoustine, scallops, seafood or poultry dishes.
Vinification
The soil of this Chardonnay consists of granite with a significant proportion of quartz, hence its name Quartz Stone. The grapes come from the oldest vineyard on Glen Carlou. It was planted in 1989 and exceptional wines are continuously produced. After harvesting, the grapes are spontaneously fermented in 90% new French wooden barrels and the remaining 10% in Nomblot Beton eggs. The Chardonnay is not subjected to malolactic fermentation, so it presents itself with a restrained acidity. Aged for 11 months in French wooden barrels.
