About the wine

In the third generation, Birgit and Hansjörg Rebholz and their team work invariably in harmony with nature and intervene as little or as little as possible in the processes. The vines must therefore make do with what nature around Siebeldingen gives them. The result is wines that take a lot of time to develop their strengths, but that is exactly why they have a lot of character.

Tasting note
Medium lemon yellow, wonderful aromas of minerality and spice on the nose with notes of pepper, flint and herbs. Complex palates of citrus fruits, ripe apple, apricot and peach. In addition, the influence of herbal spices and the formative minerality, extraordinary storage potential!
Culinary recommendation

Vinification
The selected grapes are harvested manually in several harvesting cycles and then subjected to a 24-hour, cool maceration period. It is then gently pressed and the must is clarified by means of natural sedimentation before it ferments in temperature-controlled stainless steel tanks. The wine is then aged on the fine yeast for six months and matured before being bottled and sold.
