Comincioli harvests the grapes for the Sulèr at the beginning of the harvest period, places them in small boxes, a maximum of 4 kg each, so as not to injure the berries by their own weight. He then lets the healthy, ripe grapes dry for 3 to 4 weeks. The result is a wine full of character with good structure, elegant but with a beautiful fullness. The local grape varieties, which are not widely used, give it pleasant notes with slightly exotic accents.
