Tasting note
Dark purple. Very rich already on the nose. With aromas of dried fruit, blackberry jam. Wrapped in subtle spicy and tobacco notes. Compact on the palate, with a spicy-sweet extract, lots of finesse and depth. Persistent, with gently embedded woody aromas on the finish.
Culinary recommendation
Goes well with herb-crusted lamb.
Vinification
In order to achieve the best possible degree of ripeness for each variety, the grapes are harvested separately, some fermented in steel tanks and partly in wooden barrels and then aged for around 22 months in French barriques (Allier, Never, Tronçais, 30% new). This is twelve months separately by grape variety and a further ten months as a blend of all grape varieties.
