Sus Scrofa DO 2021 - Celler Pardas

About the wine

This is a dreamlike property, not a luxury, no showmanship, but an unpretentious, healthy and complete agricultural world on 30 ha of land, forest, cereals, fruits, vines, and all the animals, and all this since the Middle Ages, in Alt Penedès! The Finca Can Comas. You simply have to have such a property, you simply have to do something nice! And they have that too, Ramon Parera and Jordi Arnan make their wine here, with their hearts, with nature, with autochthonous grape varieties that were far too laborious for other winemakers, not very productive, nature that simply cannot be completely tamed or chastised with chemistry. But Ramon and Jordi leave out chemistry anyway, synthetic too, because there is no plowing in the vineyard either. It is simply allowed to grow around the vines and with them, what lightness and inner balance all radiates here, and so are the wines. Untouched beauty, inner harmony, unpretentious charisma from old varieties. Wines like winemakers: role models!

Tasting note
Daydreamer - oh how sunken, open, calm the thoughts, animalistic but not energetic the beginning, in it also the beautiful very clear, the fresh red berries, accepted the challenges, the dark mineral notes, united and understood, harmony. On the palate, gentle, at least not abrupt, but still: awakening, the fruit is still light and dreamy, but the world comes in impatiently, immediately the tart, ethereal notes, loud fresh acidity, now everything brighter and faster, that wakes up, prompts, but in thought still reverie, this untouched, clear, now brighter red fruit. sigh.
Vinification
Highly selective reading by hand. Gentle pressing, fermentation (half whole grapes) with vineyard's own yeasts, aging in cement. No fining.
