About the wine

The Celestino Gaspari winery had been working as a consultant and oenologist for several well-known producers since 1993, after which he founded a team of consultants called Zymè with Francesco Parisi in November 1999. Your first own wine (Il Harlequin) was created in May 2000, and since then you have been working even more intensively on nature, the autochthonous grape varieties, the terroir and its characteristics. The founding of their own Azienda Agricola (2003) and continuous development and innovation have already made them one of the biggest wine producers today. Zymè comes from Greek and translates as yeast and fermentation. Celestino Gaspari Having already grown up in the vineyards on his parents' farm, he joined Giuseppe Quintarelli in Negrar (1986-1997), one of the most important Amarone producers. At the same time, he attended wine schools and obtained all titles. His enormous knowledge of the vines, the terroir and the origin of grapes to wine is clearly visible in his products.

Tasting note
In the bouquet of dried plums, cherries, licorice and vanilla, the palate is caressed by a silky body with wonderful texture, finesse and aromas of red fruits, fading roses, spices and licorice.
Culinary recommendation
Goes well with grilled beef, duck breast, game fried and not braised. A leg of lamb in the oven — i.e. gigot. A crispy rösti with cheese and bacon. Roasted veal liver with sage. Ripe cheese made from cow or goat milk. Or simply without food!
