About the wine
The winemaker from the Italian winery Monteti is absolutely proficient in his craft. Style and finesse are the characteristics of this red wine, which originated in the fertile and flourishing Tuscan countryside. We have a special, dominant Cabernet Sauvignon from 2011 for you, which is a source of enthusiasm among many wine connoisseurs. Flaschenpöstler culinary tip: This Cabernet Sauvignon is ideal to serve with red meat or ribeye steak.
Tasting note
The 2017 Caburnio is composed of around 55% Cabernet Sauvignon, 25% Alicante Bouschet and 20% Merlot. A multi-faceted, delicate mineral-looking bouquet with aromas of dark berries, grilled red peppers and Mediterranean herbs such as rosemary and sage. Complex on the palate, deep with present tannins and good pressure. A well-balanced acidity also gives the wine backbone and freshness.
Culinary recommendation
Goes well with pasta dishes or pizza, but also with sausages and grilled meat, such as lamb racks with garlic and rosemary, or with stews such as Italian bean stew with wild boar sausages. Even with recent hard cheeses.
Vinification
Angaben über Vinifizierung: Die Trauben werden getrennt vinifiziert. Nach der temperaturkontrollierten Gärung, welche 6-8 Tage in Anspruch nimmt, bleibt der Jungwein noch weitere 18-20 Tage mit den Schalen in Kontakt. Danach wird 50% des Weins in Stahltanks und 50% teils auf neue, teils auf gebrauchte Barriques umgezogen, wo er anschliessend ein Jahr lang reift. Nach der Assemblage und Abfüllung ruht der Caburnio weitere 12 Monate in der Flasche.
