Philippe Pacalet is a very fine address for top Burgundy and Beaujolais in Beaune. Pacalet not only has winemaker genes in his blood (as nephew of the famous Beaujolais winemaker Marcel Lapierre), but also has a wealth of experience. Only absolutely flawless grapes serve as a basis, the whole grapes ferment with natural yeasts and without the addition of sulfur.
