Tasting note
The wine has an attractive nose of lemon and passion fruit, combined with fresh herbal notes. On the palate, it shows a wonderful fruit concentration with mineral undertones and is balanced by fresh acidity. The aftertaste is soft and dry.
Culinary recommendation
Goes well with fish, seafood, salad, asparagus.
Vinification
The grapes were harvested when the winemaker noticed the maximum of passion fruit aromas and at the same time a fresh, crunchy acidity. Gentle pressing and subsequent cold fermentation of approx. 96% in stainless steel tanks to preserve the optimal freshness of the aromas. The rest was fermented in French oak barrels with wild yeast for added complexity and texture.
