Tasting note
PREMIER VIN SON MAYOL is a wine that, thanks to its good fruit and less tannins, is suitable as a modern classic for lovers of lighter wines. In this vintage, the wine benefits from a very large proportion of the Cabernet variety. His youth is reflected in its full fruitiness. The Premier Vin 2017 can be enjoyed right away, but is also ideal for storing in the wine cellar... This expressive vintage shows its sunny character to the fullest!! Blackcurrant and dark Cabernet grapes are the first flavours to develop, followed by vanilla and pepper notes. In the mouth, the wine is soft and almost sweet at first, then becomes round and velvety and fruity on the aftertaste.

Vinification
The grapes from the different vineyards are vinified separately and then assigned to one of the two wines. Through this individual selection of the various batches, the individuality of the two wines produced is promoted and preserved. Son Mayol benefits from around thirty-five different “terroirs” and thus from a combination of many different influencing factors. These include different soils (clay, limestone, sand, silt), various (south, north, east, west) areas, most of which are on slopes, and various grape varieties. In the modern wine cellar, the team vinifies the various vineyards individually and according to the principle of gravity. It is only at the end of the two-year barrel aging in one to two-year barrique barrels that it is decided which sites are used for which wines.
