About the wine

Villa Corniole was founded in the Valle di Cembra, the land of “heroic viticulture” in Trentino Alto Adige. The history of the “Villa Corniole” winery and sparkling wine cellar begins from far away, from generations of winegrowers who, with commitment and satisfaction, have built and shaped one of the most impressive panoramas in Trentino: the Cembra Valley, where viticulture, defined as “heroic”, also represents the form of landscape protection, a priceless value for the area. What drives the family is the constant desire for innovation, passion for viticulture, determination and care, and pride in this beautiful area.

Tasting note
Straw yellow color with greenish reflections. Rich and persistent foam; very fine and persistent perlage. Elegant and intense bouquet, fragrant and complex, with floral and ripe notes of yellow fruits typical of Chardonnay, but also light and subtle notes of hazelnut and lightly toasted bread, due to the long maturation on its own yeasts. Strong, spicy, mineral and fresh taste. A sparkling wine that is immediately reminiscent of the Cembra Valley due to its characteristics, a very suitable terroir for Trento DOC.
Culinary recommendation
Excellent as an aperitif. It goes perfectly with many fish- or vegetable-based starters, first courses and risottos and fish to taste
Vinification
Vinification: after careful manual selection of the grapes, gentle pressing of the whole grapes, using only the free-running must. Fermentation and maturation in stainless steel tanks at a controlled temperature. Second fermentation in the bottle according to the classic method followed by long maturation on the lees for 3 years in an underground cellar.
