Tasting note
With its bright color and subtle bouquet, the Caillottes is a delicate wine. A typical expression of Sancerre Blanc's style, this cuvée is refreshing, supple and supported by citrus aromas. The palate is left with a long mineral and aromatic finish.

Vinification
The soil of the “Caillottes” consists of small limestone pebbles mixed with clay and originate from the Kimmeridgium (Oxford Jura). The white pebbles now cover most of the vineyard, which speeds up the ripening of the grapes by reflecting sunlight in the vines. This terroir is known for its aromatic intensity and airy wines. The grapes are gently pressed in a pneumatic press. Prior to fermentation, the expression of the terroir is maximized by prolonged contact between the clear juice and the fine yeast grounds. Fermentation at a cold temperature ensures slow fermentation, which brings out the complexity of the wine. The 8-month maturation on the fine yeast refines the style and reinforces the balance.
