Vinification
A few words about vinification: The vines for this Saint Joseph are rooted in granite-rich sandy soils in northern plots of the appellation. After handpicking, the grapes are completely destemmed and gently squeezed. Fermentation takes place in open stainless steel tanks. The wine is then aged in half French barriques and 500-liter oak barrels for 12 months. Around 10% virgin wood is used
