The vines are located at high altitudes of the Adelaide Hills. That means cooler nights and fresher grapes. The grapes are destemmed and left on the skins for four hours, giving the wine its delicate, pink color. In order to maintain the freshness of the Adelaide Hills, the rosé is fermented in stainless steel tanks and bottled after a short period of aging.
