Tasting note
Darling Cellars Chocoholic Pinotage is already in the name - but this wine is certainly not only an absolute treat for chocolate lovers! A delicious and elegant wine that bewitches both the nose and the palate with wonderful aromas of Turkish honey, red and black cherries, vanilla, plum, fudge and an unmistakable hint of delicious chocolate, paired with soft tannins and lingering notes of toasted oak. This wine presents itself in a very modern style with the unmistakable trademark of Darling Cellars elegance. Seductively supple, sensually soft with minimal and subtle sweetness, simply more tasting and outrageously addictive - just a typically decadent Pinotage that brings the unique terroir of the Darling region into the glass.
Culinary recommendation
Goes well with dark chocolate or spare ribs with acacia honey glaze.
Vinification
The recent delineation of the Darling district has led Darling Cellars to focus on wines that are terroir and varietal specific. The cool and temperate climate on the west coast lends itself to a different micro and mesoclimate, which, together with the different types of soil, leads to unique grapes. With 99% of all vineyards and almost the same proportion of bush vines, this is so close to what nature intended for grapes. Seductively smooth, sensually soft. After harvesting, the grapes were slightly crushed and fermented on the skin at 20-30°C. After malolactic fermentation, the wine matured for 8-12 months in barrels with staves.
