Tasting note
This 2021 soldier has one of the brightest and most transparent colors ever. The same freshness that the color suggests continues in the wine and shows aromas of crushed pomegranate and fresh cherries. It is striking that the tannins are much more grippy than expected, and although the wine is very aromatic, it is well tolerated in the bottle for a few more years. Fermenting the Soldaat vineyard is a wonderful experience in the cellar, as the aromas and scents of red strawberries, cherries and pomegranates fill the entire room; these and similar aromas are also found in the resulting wine.
Culinary recommendation
Goes well with Mediterranean stews.
Vinification
The approximately 60 years of unwatered old vines grow at 708 meters above sea level on the weathered granite soils of the Piekenierskloof, which played a strategically important role in the Boer Wars. In recent years, this location near Citrusdal has emerged as the location in South Africa for the world's most-grown red wine grape, Grenache. The soldier wears a purple wax capsule, the color of the highest military award. An homage to the wines of the southern Rhône, but less massive and much more fragrant. Not as alcoholic as is so common, transparent in color. The Grenache is prone to overproduction and, in many ways, its major earlier decline can be linked to this fact. But when a vineyard gets old and is planted in a less lenient location with less fruit load, it can compete with the most elegant and refined red wines from the Mediterranean climate. 60% of the grapes are fermented in a concrete tank as whole bundles and 40% destemmed. Fermentation takes about 30 days on the skins and then the wine is pressed. The soldier is then aged in concrete tanks for a further 12 months.
