About the wine
Lou Coucardié is at the heart of Michel Gassier's work as a winemaker. He was named after the regional bull - a noble adversary who, in accordance with historical traditions, persecutes people through the streets (not vice versa). The wine is graceful and strong, like the ideal of its breed.

Tasting note
Powerful and complex on the nose with notes of ripe peach, ripe apple and sweet pear, accompanied by caramel, crepe suzette, honey and pleasant woody aromas. On the palate, this white wine has a lot of depth and a full-bodied body, plus a wealth of aromas such as ripe apples, buttery pastries and nutty nuances. Complex on the finish and long with power.
Culinary recommendation
Von den Flaschenpöstlern empfohlen: Lou Coucardie blanc AOP Costieres de Nimes harmoniert ausgezeichnet mit Fondue, geröstetem Geflügel an Zitronensauce und Kartoffeln. Unsere Empfehlung: Trinken Sie diesen Bio-Weisswein bei leicht gekühlten 10°-12°C. Im folgenden Zeitraum liegt die empfohlene Genussphase dieses Weins: 2014 - 2021.
Vinification
The grapes are harvested manually from the old vines and selected again in the cellar. They are then cold macerated with the shells and pressed off without adding sulfur. Fermentation takes place with natural yeasts in 500 liter tonneau, where the wine then matures for nine months. The yeast grounds are stirred occasionally.
