About the wine
Carsilias is one of the oldest plots in Maienfeld, with perfect conditions for Pinot Noir. An exciting “Burgundy from Switzerland” with aromas of strawberries, heart cherries and tobacco.
Tasting note
Strong ruby with light violet reflections, on the nose aromas of ripe fruits, heart cherries, tobacco, spicy hints, notes of barrique aging finely integrated, soft start on the palate, yet firm and structured, lots of power, fine tannins, fruit and length.
Culinary recommendation
Goes well with veal and pork dishes, poultry and Grisons specialities.
Vinification
Extensive hand-picking, 5-8 days of cold standing time of the mash, open mash fermentation in wooden vats, 1-2 times/day manual pestling of the fermenting mash, gentle pressing, aging in French barriques (approx. 30% new wood) for 12 months.
