Not all wines made from the Primitivo grape are synonymous with opulence, warmth and extreme suppleness. Some exceptions have a slimmer structure, light fruit aromas and even an unexpected freshness in expression, as well as on the palate. A good example of this is the Primitivo Salento Rosso IGP from Giovanni Petrelli, which comes from the vineyards called “Vini della Chiusa”. Mash fermentation at controlled temperature in steel tanks only takes six days, as does the four-month refinement in oak wood, a rather short period of time so as not to obtain wine with too many wood notes. The cherry and plum bouquet and the harmonious, persistent and versatile taste make it a wine that can be paired with traditional Mediterranean dishes.
