Tasting note
A white wine gem from Tiefenbrunner! The elegant RACHTL Sauvignon Blanc Riserva is subdued at first and only opens up its complex potential in the glass. The primary mineral scent of flint, graphite and slate is gradually overplayed by fruity nuances of dried hay and exotic fruits. This fine and balanced wine with its bright straw-yellow color interspersed with greenish reflections delights the palate with a fresh, pronounced acidity, juicy, salty taste, and the aftertaste is persistent.

Vinification
Sauvignon Blanc is harvested when fully ripe, as the acidity levels remain surprisingly good even in this phase. The berries are gently pressed after an eight to twelve-hour maceration period. 25% of the must is subjected to alcoholic fermentation in new tonneau barrels and 75% in large wooden barrels and remains there for almost a year. This process gives RACHTL Sauvignon Blanc Riserva its softness and structure. In order to preserve its minerality, strict care is taken to ensure that there is no biological acid degradation during this time. The assemblage is then clarified naturally in steel tanks for half a year. After bottling, the wine ages in the bottle for a further 12 months
