Tasting note
Brilliant golden yellow. On the nose, a very rich bouquet of ripe, exotic fruits such as mango, papaya, lychee, pink grapefruit and a hint of caramel. The palate is full-bodied, very complex and elegant. Again, lots of ripe exotic fruit, grapefruit and an almost sweetish looking density, which is supported by a perfectly balanced acidity. A skillfully used barrique ageing gives the wine a wonderfully long back aroma.
Culinary recommendation
Delicious with Loup de Mer, Saint-Pierre and seafood.
Vinification
A selection of the best and ripest Sauvignon Blanc grapes — grown near Blenheim — is used to make the winery's top wine. In the cool morning hours, the grapes are harvested by hand, and the grapes are immediately pressed and fermented in barriques. The young wine is aged on the lees in used barriques for four months. After two months of bottle aging, the wine is sold.
