About the wine

What a wonderful landscape is this, an enclave south of Rome, surrounded by volcanic mountains, Piglio, like a Gaulish village, here people live, cultivate and preserve, by no one as by the two cousins Daniele and Pierluca Proietti, who have been farming here organically since the 1980s, including 7 ha of wine, the best locations, each with a unique terroir surrounded by olive groves, meadows, forests. Today, farming is carried out according to biodynamic principles, neither copper nor sulfur is used, certainly no pesticides, and even in the cellar the greatest reluctance to use funds, but does not shy away from action. And this own spirit, inherited and rooted over generations, the healthy conviction that is also found in wines, how they live and glow, are unique and independent in such a healthy way, that is a wonderful pleasure. Tasting note
Back to life - this wine blossoms, the yellow fruit, this inner strength and joy, have survived, come out from the depths, it rises with so much confidence, beautiful grape, lively yellow fruit of so much powerful peace, yeasty, healthy freshness. On the palate, a clear, bright lightness that floats, that strives, that is as liberated as it rises slightly from the depths, with such harmonious freshness, with a refreshingly tart, slightly bitter note, as liberated from everything dark. Wonderful, it's just luck.
Vinification
Very selective harvesting, whole grape maceration up to 16 hours before pressing, fermentation with the vineyard's own yeasts in steel tanks, storage on the yeast for several months, aging in 54l glass jugs. Unembellished, minimal addition of sulfur.
