About the wine
Sébastien was just 21 years old when he gave up his job in a Parisian wine shop in 2002 to prevent the sale of his parents' winery in Sury-en-Vaux. As early as 2003, the conversion to biodynamic viticulture took place, rigorously, even the use of copper is dispensed with, in any case, with machines anyway, the processing is carried out with horses. The vineyards resemble natural oases, what a variety, there is no sign of monoculture. An extremely late harvest with botrytis, lots of time in the cellar, time instead of chemical aids, a wheel-cold approach, but the wines are anything but radical, they radiate an inner warmth and peace, a gentleness, a size not otherwise found in Sancerre, very big, and far away from the steel, crisp and grassy Sancerre! A revelation!
