The wines of Kleine Zalze are characterized by a classic structure and complexity, which goes hand in hand with a lively flavor intensity. Recognizably South African in style, they are refreshing, beautifully balanced and ideal for dining. Our wines are produced using traditional methods with minimal intervention in the cellar, but with modern equipment. The intensity of the New World” with its full fruit aromas combined with the elegance and structure of the Old World” results in wines of character, complexity and balance that reflect our terroir and climate. Tasting note
An opulent wine that is full-bodied both on the bouquet and on the palate. The focus is on aromas of plums and dark chocolate with ripe black berries, which are beautifully balanced with a touch of black pepper. A full mouthfeel with strong tannins, which are underpinned by oak, give the wine a special charm both alone and with food.
Culinary recommendation
Goes very well with strong meats such as venison, lamb or beef. But also spicy food.
Vinification
Most of the grapes for this wine came from our own vines with a few selected plots from other vineyards in Stellenbosch. All plots were harvested and vinified separately. After manual harvesting, the grapes were sorted and transferred to the “wholeberry” tank, i.e. without squeezing. During fermentation, the juice was pumped around regularly to achieve optimal extraction of color and flavor. After fermentation, the wines were pressed and transferred to barrels for malolactic fermentation. The wine aged for 22 months in a combination of first (30%), second (30%) and third (40%) French oak barrels before the various components were assembled and prepared for bottling.
