Tasting note
THE cult wine from the island! Not a heavyweight boxer but a finesse, complex and aristocratic wine. The bouquet initially looks very whisky-like. With air, beautiful red berry fruit, dried flowers, smoked bacon and Herbes de Provence. Firm and with grip (crisp tannins) in the structure, rather mild in acidity, lots of wood and malt aromas, cloves, red fruit, good balance of fullness and structure, but only at the beginning of the ripeness of consumption.
Culinary recommendation
Our recommendation: The red wine tastes best at slightly chilled 15°-17°C.
Vinification
This wine comes from the 3 oldest vineyards in the Son Negre zone in Felanitx. Aerated by the sea breeze, it offers very special features: Barren land, extreme mineralization and low water retention. These are vineyards with very low production. Harvested and selected by hand. Fermentation in a wooden tank. Aging for 20 months in new French barriques.
