Tasting note
On the nose, a spicy and sensual scent, peppery and open. The broad and complex bouquet is accompanied by vanilla, berries, cherries and a hint of chocolate. You can taste smooth elegance on the palate and slightly ripened taste. In addition, there is a slight spiciness, vanilla flavor, cherry. The overall enjoyment is soft and well-rounded.
Culinary recommendation
Goes very well with strong meats such as game, lamb or beef.
Vinification
The grapes were fermented entirely with local yeasts (according to old custom) and left on their skins for 5 weeks. This was followed by slow 2 years of barrel maturation and a further 4 years of bottle maturation. The long wait is justified, because The Work of Time is a Bordeaux blend with a big statement.
