Tasting note
This wine, obtained using the special Ripasso process, has a dense structure, soft substance and a lasting finish. Deep ruby red in color, it has a pleasant scent of wild berries, cherries and nuances of spices and raisins. This ripasso seduces with its elegance and balance. The polished, round yet powerful body paired with lots of fruit and enamel leaves a complex and lasting sensory impression. Actually a “small” Amarone with class and race!
Culinary recommendation
Goes well with classic Italian cuisine such as antipasto, pasta, pizza, risotto, etc.
Vinification
After careful handpicking of the grapes, which come exclusively from the older vineyards, they are gently pressed and the must is placed in stainless steel tanks where fermentation takes place under permanent control and perfect hygienic conditions. This wine is then “ripassato” with the Amarone mash. This actually involves a second fermentation, especially as the wine increases in concentration, alcohol content and aroma and the fructose obtained must be fermented. Aging in the bottle of 6-12 months gives the wine additional harmony and elegance.
