Vinification
The pressing method was already used by the ancient Romans to give the then light wines from the Valpolicella region more body. Fermentation takes place at a temperature between 22°-28°C and maceration lasts 8 days. The Ripasso “I Lasi” is shiny ruby red and the second fermentation on the Amarone pomace gives this wine even more intense aromas and taste nuances, with a note of sweet almonds and sour cherries. Dry on the palate, medium-bodied, but with character and freshness. Acidity 5.95 g/l; residual sugar content 5.6 g/l; dry extract 30.6 g/l.
