About the wine
With experience and intuition, the winemaker from the Italian winery Azienda Vinicola Cascina Baricchi masters this white wine in the blooming and sunny landscape of Piedmont. With the strong Chardonnay — Vino Bianco ChéChà VdT, nuances and accents are redefined. Culinary tip from Flaschenpost team: This Chardonnay is ideal to be served with soft cheese or truffles.

Tasting note
Complexity in smell and taste, without appearing heavy and difficult, on the contrary, good drinkability from the first to the last sip. Minerality on the palate due to a hint of acidity, which makes the wine elegant. Long aromatic finish.

Goes well with crustaceans, white meat, Asian specialties, soft cheeses.
Vinification
The tireless wine producer, Natale Simonetta, Cascina Baricchi, Neviglie, once again surprised us this year with this delicious white wine, with the original name: Chéchà. This name originated from the double term Chenin Blanc (share of 40%) and Chardonnay (share 60%). The chéchà is refined on its own pomace for 30 months after the grape must has spontaneously fermented in inox containers at a temperature of no more than 22° for about 12 days. The new wine is then decanted a further two times at intervals of 15 days in order to decant the wine naturally. The last transfer takes place in November. The wine is then refined for 30 months on its own pomace, where it undergoes a weekly bâtonnage process to release the deposited yeast again. In this way, oxidation is reduced despite the addition of a small amount of sulfite.
