Tasting note
The Waterkloof Circle of Life White envelops the nose with fresh Sauvignon Blanc - aromas of sparkling lime and fragrant gooseberries. Generous floral Chenin Blanc - flavors of apple and pear with a fine mineral core, excellent texture and remarkable complexity and semillon - creaminess on the middle palate. The fresh acidity obtained from Sauvignon Blanc perfectly rounds off this luscious wine fermented in the barrel.
Culinary recommendation
It goes wonderfully with Asian dishes such as curries or Thai specialties.
Vinification
The grapes are picked early in the morning when they are still cool, which helps to preserve the flavor and acidity. The juice is extracted from the grapes by pressing the whole bunch of grapes. This is the most gentle way to extract juice. After a settling time of 24 hours, a large portion of the juice was intended for co-fermentation. The blend of Sauvignon Blanc, Chenin Blanc and Semillon before fermentation, which took place in old 600-liter barrels. In the end, this enabled a more integrated and complete end product. After a very long, natural yeast fermentation of six months, the wine was left on the primary yeast for an extended period of time before bottling. This helped to add complexity and weight to the palate. The wine was then bottled into a fermentation tank and the final blend was made with additional Sauvignon Blanc and Chenin Blanc. The wine then ages for a longer period of time in the bottle before release. The wine is produced as naturally as possible, without the addition of acids or enzymes.
