Tasting note
Delicately straw-colored, the Babylonstoren Candide flows into the glass and, with its elegant bouquet of delicate tropical notes, is a real feast for the senses even before the first sip. This seductive cuvée is pleasantly fresh and fruity on the palate with delicious nuances of white peaches, limes and delicate lychee. A refreshing yet stunningly complex wine with a well-balanced and fresh acidity and a lingering aftertaste.
Culinary recommendation
It is fantastic for a light lunch in summer with salads, fish or vegetarian dishes.
Vinification
Chenin Blanc and Semillon were gently pressed, fermented in stainless steel tanks at a cool temperature for three weeks and spent four months on the secondary yeast after fermentation was complete. Chardonnay and Viognier fermented in French oak barrels with a capacity of 300 l per barrel and also spent four months on the yeast. Candide expresses the immense versatility of the white grape varieties Babylonstoren s in an excellent way.
