Alessandro and Claudio Gini (Soave Classico, Amarone and Valpolicella Scajari) have a great sparkling wine produced, the traditional Camillo Metodo. They have the Wine 2010 using the traditional method for Bottled fermentation, but instead of champagne and other sparkling wines are fermented in bottles by to provoke the addition of sugar (this is how the carbonic acid/perlage in sparkling wine), do they have the wine added their own sweet wine, Recioto. Since So in 2010, Camillo was on his hands. Because the longer A sparkling wine is so mature, the finer its Perlage.
